We went for a run and got caught in a torrential rain. The 5km uphill seemed like such a long run! Even a hot bath did not seem to warm me up.

Fortunately, I always have chicken stock in the freezer. I make batches of that each time I have a chicken carcass or beef bones.  Recipe for making stock can be found here.

So I just defrosted the stock and added the following:

  1. Rice, soaked
  2. A handful of millet and quinoa towards the end of cooking time
  3. Frozen sweetcorn
  4. Whatever vegetables I have in the fridge
  5. Tomato
  6. A dash of brandy

Before serving, I topped with:

  1. Chopped spring onions and parsley
  2. Slice chilli
  3. Seeds
  4. Salt and pepper
  5. A swirl of Udo oil
  6. A bit of tamari
  7. Dried marigold flowers

Eating this in bed with my partner, watching Agatha Christie’s Murder on The Orient Express …. sheer happiness ❤  Totally een feestmaaltijd
