There is nothing quite like sitting indoors with family on a Saturday night eating a simple shepherd’s pie.  Here’s my quick-and-easy recipe, refined over the years:

1 pound ground meat (I used beef)
1 medium onion, chopped
3 cloves garlic, minced
1/4 teaspoon dried thyme
2 tablespoons ketchup and a generous dash of Worcester sauce
1 tablespoon all-purpose flour
A cupful of cubed carrots and frozen peas
Coarse salt and ground pepper
3 cups of mashed potatoes, mashed with lots of butter and milk

Preheat oven. Brown the meat until no longer pink, which will take 4 to 5 minutes. Add onion and garlic, and cook until softened.
Season generously with pepper.
Add thyme, ketchup, Worcester sauce and flour, and stir until combined. Add 1/2 cup of water and the vegetables. Cook until vegetables are warmed through and liquid has thickened and the carrot softened. Add salt. You might wish to add a glass of red wine, which I do 🙂
Spoon meat mixture into a pie dish. Spread potatoes evenly over meat. Bake until potatoes are browned.
