Underweight is never a good look. I spent the second half of November and all of December trying to keep food down, for no reason other than to stay alive and be healthy again. I am shocked how quickly the pounds fell off me, leaving me looking so sick and malnourished.
Next to me, Anna and Vicky looked positively, gloriously healthy, curvy and sexy. Like I once was. Despite being 75% Asian, I was unusual in that I was kind of buxom.
Anna says in the Ghanaian culture, whenever someone is ill, everyone would say to the ill person, “Eat, EAT!” It was difficult, but I started slowly. I started with avocados, largely because they are of high nutritional value and they taste bland. In a 100g portion of avocado, you get 160 calories, 2 grams of protein and 15 grams of healthy fats. Wow!

An open-faced avocado, pine nuts, tomatoes and spinach sandwich:
Avocado with roasted root vegetables, drizzled with balsamic vinegar and olive oil.
I also blended avocados 9ad dates) with lots of green stuff to make a nutritious smoothie.
