I absolutely love pancakes for breakfast. I used to make the gluten-free, sugarless ones in Jakarta. My pancakes are full of goodness, perfect start to your day. My daughter calls them omelettes in disguise because that’s what they are 🙂
Here’s the basic pancake batter:
Put the following in a blender: 2 ripe bananas, 3 eggs, 1 tsp cinnamon, pinch of salt and vanilla pod. Blitz all together. Cook in a pancake pan with melted butter.
Then top up with anything you want. This is a mega luxury one dressed with mango compote, satsuma segments soaked in Cointreau, sliced banana, raisin, chia seeds and a drizzle of honey.
