One of the things I love most about being home is just walking around my home. I came across lots of luxurious sprays of elderflowers, just from walking around the narrow lanes of my son’s house. My grandmother used to make elderflower cordial and it always reminds me of her, so I made some today:
How to make elderberry cordial:
Boil water and remove from heat. Place the flower heads in a large bowl. Cover with boiled water. Add in some lemon and orange zest.
Inspect the elderflower heads carefully and remove any insects. Place the flower heads in a large bowl together with the orange and lemon zest.
Cover and leave overnight to infuse.
Strain the liquid and pour into a saucepan. Add the sugar, the lemon and orange juice and the citric acid (if using).
Heat gently to dissolve the sugar, then bring to a simmer and cook for a couple of minutes.
Good for salad dressing (undiluted) or fragrant ice lollies (diluted). Delicious with vodka! Remember to leave the flowers for berries later on!
