I don’t often bake bread so I do not have a stock of yeast at home. But at 11pm last night, I thought I’d like to fill my house up with the smell of freshly baked bread. So I made this hybrid cake-bun:

4oz caster sugar
4oz butter, softened
2 large eggs
4oz self-raising flour
½ tsp baking powder
1tbsp milk                                                                                                                                  cinnamon powder                                                                                                                        leftover fruits from Christmas cake (raisins, sultanas, cherries etc)

Preheat oven to 180 degrees. Mix the first six ingredients together.  Press into a well-greased muffin tin.  Brush with milk. Halfway through baking, add the cinnamon powder, a bit of brown sugar and dried fruits. Bake until browned.

Don’t think you could sell those, but they sure make the house smell good at midnight (it roused my daughter from her sleep)  and don’t taste too bad either.  But most of all, these midnight buns are about us having an unexpected midnight snack together ❤
