What is it about children and carrots? I went through a brief phase where I refused to eat any (though I generally loved carrots as a kid). To entice me to eat my carrots, my mum doused julienned carrots with lots of butter, sugar and garlic. Cook that over low heat and I think even the fussiest eaters will eat them. The sugar drowns out the carroty taste and the garlic makes them smell good.
Here’s a healthier version:
Toss carrots in olive oil, minced garlic, grated parmesan cheese, salt and chopped parsley. Roast until browned. Absolutely delicious. And healthy.
