Like many people, I think breakfast is the most important meal of the day nutritionally and a non-verbal way of saying ‘I love you’. But sometimes, it is nice to lie in bed for that little while longer…. well, until mid-morning 🙂
I made a tray of this the night before and I got up forty minutes before breakfast, sleep-walked to the oven and put the tray in :
Ingredients:
3 ripe bananas, peeled and mashed up with a fork
2 free range organic eggs
1/3 cup honey
2tsp baking powder
vanilla extract
1 tbsp cinnamon
1 cup yoghurt
3 cups oats
1 cup milk
Mix all together, top with fruits and bake in a 180 degrees oven for 45-60 minutes (depending on how long it takes your oven to heat up). And et voila, you get this:
