My friend Jane knows me very well. On my birthday, she rang on my doorbell with the best present a woman like me could ever want: all the ingredients to make a yummy dish. Jane, originally from Scotland, had lived in Egypt for many years and is quite an expert on Middle Eastern cuisine. So she had thoughtfully given me ALL the ingredients I need to make this wonderful dish:
Ingredients:
1 big, rounded aubergine
2 cloves garlic
2 bird’s eye chillies
1 sprig parsley
1/4 cup lemon juice
1/4 cup tahini
a drizzle of olive oil
salt
Method:
If you are adventurous, you could char the aubergine on your stove. I baked mine in a hot oven until the skin blistered, and removed the flesh. Then just whizz everything up in a food processor. It can’t get simpler than that!
