One of the things that I love is making healthy nutritious breakfasts for my loved ones to start their day off on the right footing. It’s my way of saying I Love You.
I love this unusual granola that I made late last night: I used pieces of candied ginger and that just really lifted the taste! I think it’s really worth making since shop-bought granola is often full of sugar (and expensive).
For the granola:
4 cups rolled organic oats
1 cup wheat germ
2 cups mixed seeds and nuts: almonds, pecans, walnuts, sunflower seeds
1 cup raisins
1/2 cup honey
3/4 cup extra virgin coconut oil
4 tablespoons brown sugar
2 tablespoons chopped candied ginger (candied ginger gives this granola its unique taste)
1/2 tablespoon cinnamon
a few drops vanilla essence
pinch of salt salt
Warm the honey, coconut oil and brown sugar until all ingredients are blended. Add cinnamon and vanilla essence. Stir in the rest of the ingredients until all are well coated. Turn over on a greased baking tray and bake until slightly crunchy.
To assemble:
Blend 2 large rip mangoes with the flesh of 4 passionfruit.
Add berries, chia seeds, flax seeds and more fresh fruits to the bowl.
And your amazing breakfast is ready.
