In my ‘fish’ mood, I was pleasantly surprised to find a very reasonably priced fish stall, where the offcuts are sold off very cheaply (suitable for making dish stock).
Here’s my Thai salmon fishcakes recipe, using salmon fillets:
- Poached 1/2 kg of deboned salmon fillets in a shallow pan of milk, bay leaf and peppercorns.
- In the meantime, boil three large sweet potatoes until soft. Mash the potatoes.
- Flake the cooked salmon.
- Flavour the salmon with (1) juice of 2 limes (2) 2 cloves garlic, minced (3) 1/2 inch ginger, minced (3) 1 red chilli, finely sliced (4) 1 sprig of spring onions, chopped (5) I small bunch of coriander, chopped (6) a dash of soy sauce and (7) salt and pepper
Add all the ingredients. Make into patties, put on a well-greased baking tray and bake at a moderate heat (180-200 degrees) until browned. You may wish to finish the patties under the grill for crispiness. Serve with fresh salad and more lime juice.
